I think I saw someone on a motorcycle die today. I've never seen anything so awful in my life. My MIL was driving. We were at a light and the light turned green. The two cars in front of us went through the light and we heard a siren. MB stopped at the intersection while we looked for the ambulance. The cars all around us stopped also. The ambulance was coming through the cross section and when he was right in front of us, a motorcycle zoomed around all the cars and ran right into the ambulance. He didn't even slow down until he was practically right on the ambulance. He was thrown from his bike and was laying there still on the ground. The speed limit on that road is 45 and he was going at least that. I can't get the image of him zooming out of nowhere and hitting the ambulance out of my head. I tried to get my mind off of it by making my Chloe a mobility toy, but as soon as I was done, I started thinking about it again. I tried to google it and I found a report of the accident, but nothing on the guy or whether or not he might have survived.

So it seems like every time I turn around there is another reason for me to love SA. Here is today's reason. It's a 25 acre special needs park. I've been wondering what they've been building at the corner of Wurzbach parkway and Thousand Oaks.

» Juneteenth
Today is Juneteenth, which commemorates the end of slavery. It's a state holiday in Texas. It took two years after the declaration for the news to reach Texas on June 19, 1865. I'm not sure if Texas was the last state to hear, but it was the first to declare it a holiday and make a celebration of it. I don't have anything profound to say, but Happy Juneteenth!

» Pumpkin Oatmeal
I made oatmeal in the crock pot before. http://quitereasonable.livejournal.com/82761.html#cutid1 I decided to make pumpkin oatmeal so I used the same recipe as a jumping off point.

1 cup rolled oats
2 1/2 cups water
1/8 cup brown sugar
1 tablespoon melted butter
1 1/2 teaspoon cinnamon
1/2 cup canned pumpkin
Sprinkle of the following: allspice, nutmeg, ground cloves, & ginger.

Add it all to the crock pot, stir it and set it on low for about 3 hours.

It came out decent but not great, more like regular oatmeal than pumpkin flavored. It's good with more sugar and butter. Next time, I'll use 1/4 cup brown sugar, 2 tbsp of butter, more of my sprinkled spices (probably a scant 1/8 tsp), 1/2 cup chopped nuts, and either raisins or craisins.

» Strawberry Oatmeal Banana Bread
I had a LOT of strawberries that were going to go bad, so I looked for oatmeal strawberry recipes. I started with this recipe: http://www.recipegirl.com/2007/02/16/strawberry-oatmeal-banana-bread-2/

1¾ cups all-purpose flour
½ cup rolled oats
2½ tsp baking powder
1 tsp baking soda
¾ tsp salt
2 Tbsp brewer's yeast
2 Tbsp flaxseed meal
1/3 cup butter, at room temperature
½ cup granulated sugar
¼ cup dark brown sugar, packed
1 Tbs dried orange peel
2 large eggs, beaten
¼ cup sour cream
1 tsp vanilla extract
1 cup mashed ripened bananas
½ cup sliced fresh strawberries

1. Preheat oven to 350°F. Grease and flour loaf pan.

2. Whisk together first 7 dry ingredients in a small bowl; set aside.

3. In a large bowl, mix butter and sugars; beat for two minutes. Add eggs, lemon zest, sour cream and vanilla; beat until combined. Mix in banana and strawberries. Add dry ingredients and stir just until combined. Gently scoop into prepared pan.

4. Bake 55 to 65 minutes, or until toothpick tests out clean.

Yield: 1 Loaf


It came out wonderful. It was especially good warm. It probably would be really good as muffins. My husband missed the nuts from banana bread, so next time I'll likely had chopped pecans.

» Dick and Twain
Gutenberg just added new books for Philip K. Dick and Mark Twain. I didn't even know that they had any of Philip K. Dick's books. He's not a great writer but I love his stuff for the ideas. In case you don't know, he is the person that wrote the stories that a bunch of movies are based on, among them are Total Recall, Minority Report, and Bladerunner (which I didn't care for as much as everyone else seems to).

» Happy Shopping Day
So seeing so many people making giant cupcakes with this pan and my mother-in-law buying me this book and then finding out that they sell them at Joanne's and that I can use my coupon, I decided that I should buy it today. P and I went out and picked one up. Joanne's has it overpriced at $32.99, but the coupon was %50 off so it was still a deal. I figure I'm going to have a lot of stinking birthday cakes to make for the girls that it will totally be worth it.

Afterward we went to a recently built HEB where the customers seem to all be snobs, but we had an amazing experience with all the employees; so much so that I'm going to have to write the management a letter. First we were passing the meat section and P noticed the gourmet hamburger's were $4.99/lb and pointed them out to me. I asked the butcher, "So out of curiosity, how many burgers are in a pound?" He told me 2 but that they were $1.00 right now because it was the end of the day and he was going to throw them out. I bought 2 because hamburgers are one of the few things that P can cook and he would eat them for every meal if he could. I got a poblano burger and if they are good, I'm going to try to shop late in the evening again for the same deal.
The other two great things is that one of the employees told me another way to pick out a cantaloupe and they opened a register just for us even though there weren't many people in all the lines.

Oh and P brought me home dinner so that was nice, too.

I have to wonder what is wrong with people to concoct these recipes in the first place. If they were pregnant, I would think Pica.
